The Agave or Century Plant is a beloved cactus of the Chihuahuan Desert. The desert floor is full of surprises, some more welcoming than others. One of my favorite discoveries is the elegant symmetrical rosette of an Agave. What you see above the earth reflects what is below. A vast root system that allows it to funnel water to its center where it needs water most. For most of its life, the plant does not bloom. Once in its lifetime, the agave produces a tall stalk and flowers, depicted in this image. This stage also signifies the end of the plants life. The blooms produce thousands of seeds which root in the earth to start the cycle anew. Native Americans use the Agave as a source for food, medicine and  soap. In modern times, Agave is the essence of the sacred elixir Mescal.
